PAPAYA JAM WITH LIME

1 kg papaya cubes
600 g sugar
3 limes, washed and halved.
Prepare the papaya - peel, remove pips and string.
Cut in one inch cubes, then weigh.
Place the papaya pieces in a bowl, and add the sugar, and juice of the limes.
Add the lime halves and mix content very well.
Cover with a lid, and place in fridge for a few hours, ideally 12 hours. Stir content every few hours
Move bowl contents to a pot and place on low heat for 25 minutes.
Stir frequently.
Increase heat and bring to rolling boil.
Simmer until Jam sets when placed on an ice cold plate.
Remove the lime peels, and if you like, mash or blend the jam in the pot.
Bottle in warm sterilised bottles.
