PRICKLEY PEAR SYRUP
Makes approx. 1 cup of syrup
3 prickly pear, peeled and mashed
1 cup sugar
2/3 cup water
2 Tbsp. fig jam
Pinch of salt
1 tsp fresh lemon juice
Place prickly pear, sugar and water in a medium sauce pan and heat over medium heat.
Heat until the flesh of the pear breaks down and completely soft, about 10 – 20 minutes.
Strain pear mixture through a fine mesh sieve or colander to catch the seeds.
Whisk in fig jam and salt until combined.
Reduce liquid by just over half by simmering over medium heat, about 15 – 20 minutes.
Whisk in the lemon juices, and simmer for a couple more minutes.
Pour into sterilized bottle.
