SWEET THAI CHILLI SAUCE

235 ml Water
235 ml Rice Vinegar (do not use any othe vinegar)
200g Sugar
4g Ginger root finly minced
3g Garlic finely minced
7g Hot Chilli
10 ml Ketchup
5g Corn starch
Pour water and vinegar into a saucepan, and bring to a boil over high heat.
Stir in sugar, ginger, garlic, chilli pepper and ketchup simmer for 10 minutes.
Stir in cornstarch.
Remove from stove and cool.
Then bottle in strerilized bottles.
