BLOOD ORANGE CORDIAL

Prepare ingredients in a place which is easy to clean, the colour of the orange stains well!
2kg blood oranges
1.5 kg white sugar
1.5 litres water
Zest the oranges. Add to the sugar and water and bring to the boil while stirring to dissolve the sugar, reduce to a simmer. Juice the oranges and strain (there should be about a litre).
Add to the syrup and bring back to the boil. Skim off any scum. Strain and bottle.
This will keep in the fridge for about a month or so but for longer preservation you might want to place the hot bottles into pot with lids loosely on and fill the pot with hot water up to the bottle’s necks. Boil for 30 minutes and then remove bottles and tighten lids.
I have also made a variation of the recipe above where the sugar syrup is strained and poured onto uncooked juice. This will last for a few weeks in the fridge (ours goes too quickly to judge longer storage times!) and the fresh juice gives it a nicer flavour. However you would definitely need to use a hot water bottle method for any longer storage.
