CANNED GREEN TOMATO SLICES

I can thickly sliced green tomatoes then use them later for fried green tomatoes (dipped in egg and breadcrumbs and fried in bit of oil, serve with a Ranch type dressing or mayo mix.)
To can your green tomatoes
simply wash them, remove the stem area, and cut your tomatoes into slices roughly 1/4 inch thick.
If tomatoes are smaller, slice in 3 length-wise
Layer them into your sterilized canning jars.
Pour boiling water over your green tomatoes, leaving 1/2-inch of headspace.
Affix your lids and rings and process in a boiling water bath for 35 minutes for medium and 45 minutes for large jars.
The tomato is the one "vegetable" that has enough acid safe for waterbath, in other words, you don't have to add vinegar
